Perfectly Moist Chocolate Chunk Reishi Banana Bread

A fresh new twist on a classic! We've been cooking banana bread for so long now, that we thought it would be fun to put a new spin on this yummy, never-disappointing classic! If you've never cooked or baked with super-functional powders before, now is the perfect time to start! So gather up your sad, mushy bananas and bake this deliciously moist, bright and chocolatey loaf of banana bread! Share with your friends, family, neighbors... or just eat it ALL yourself (Trust us, we won't judge you for it!!)



1/2 C whole wheat flour
1 C all-purpose flour
1/4 cup almond flour
1 1/2 tsp baking soda
3/4 tsp kosher salt
3-5 scoop (6-10g) Energy blend powder
2 or 3 ripe bananas, mashed
1 egg
1/2 cup unsweetened apple sauce
1/2 cup brown sugar
3/4 cup canola oil (or other neutral oil)
Chocolate chunks

1. Set oven to 350 degrees F and coat loaf pan with nonstick spray and dust with flour
2. Combine whole wheat flour, AP flour, almond flour, baking soda, kosher salt, and Energy powder in one bowl.
3. In a separate bowl, mash bananas and mix in apple sauce, egg, oil, and brown sugar
4. Add dry ingredients to wet ingredients, stir to combine. Add chocolate chunks
5. Bake for 50-55 min or until cake tester (toothpick or a knife) comes out clean
